Both iOS and Android offer the option to set your phone to greyscale, something that can help those who are colourblind as well as let developers more easily work with an awareness of what their visually impaired users are seeing. For people with full colour vision, though, it just makes your phone drab.

Monochrome icons come in two sizes: 16px and 22px. 16px monochrome icons are commonly seen in menu items, tabs, and push buttons that have a raised, buttonlike appearance. Don’t use the monochrome style for larger icon sizes. The Monochrome style is used for Action , Status, small Places, and small MIME type icons.
What is grayscale edition?
This Light Grayscale Edition has lighter grayscale images to give the colorist more flexibility in which coloring mediums to use. The original edition with dark gray scale images is still available for people who like the darker backgrounds and use gel pens or other mediums that work well on dark paper.
How to change to grayscale?
The grayscale toggle switch is part of a new Digital Wellbeing suite of tools built into the latest versions of Android. If you open up Settings, then tap Digital Wellbeing & parental control, then choose Wind Down, you can set up a schedule for the evening: Wind Down turns the screen gray, and mutes notifications.
