Why are my iPhone app icons disappearing?
Go to Settings > General > iPhone Storage and locate apps, videos, or other large data hogs, and remove them from the iPhone. Then reboot the iPhone again by turning it off and back on (or hard reboot again). At this point the icons should be back on the screen as expected.

It is possible that Apps aren’t actually missing, it may be just a UI glitch that isn’t displaying the app icons. How about resetting the Home Screen and try to fix the issue? Go to Settings → General → Reset → Reset Home Screen Layout. If the issue is mainly a software glitch, it should be resolved by the simple Home Screen reset.
